Premium Chardonnay and Shiraz – Aged By Us, For You It has been said that ‘great wine needs time’ and we would agree. Many age worthy wines are released too young and well before they have reached optimum maturity. Our approach at Settlers Rise is to give our wines the time they need to age in the bottle before release. For this reason, the current release of the ‘Terroirs of the Granite Belt’ by Settlers Rise includes a 2010 Aged Chardonnay and a 2008 Aged Shiraz. Both wines have been deliberately aged and cellared since their production, in order to release them at the start of their optimum drinking window. These wines represent a rare chance for wine bars and restaurants to access aged, reserve wines from the Granite Belt in commercial quantities as a point of interest and differentiation on wine lists. Both wines can be enjoyed now or cellared for further bottle ageing. Find out more ➡️ www.uncorkedandcultivated.com.au/settlers-rise/

Uncorked and Cultivated

Cool Climate Wines from the Granite Belt in Queensland The Granite Belt wine region is located 200km south-west of Brisbane in Queensland. It is officially recognised as a wine producing region under its own GI (Geographical Indicator) and has a long history of viticulture and winemaking.  With its core vineyards around 1,000 metres above sea level, the Granite Belt is one of the highest wine regions in Australia. It enjoys a climate similar to Priorat in Spain, Orange in NSW or Canberra in the ACT. It has similar continental elevated regions to the south. The high altitude combined with cool nights year round and low humidity means a longer growing season in the vineyards. This enables Granite Belt producers to craft elegant cool climate wines that are fresh and refined while retaining natural acidity and intensity of flavour.   True to its name, the soils are made up of decomposed granite that is generally well drained and naturally acidic. These characteristics make the soils particularly well suited to grape growing and wine production. The 305 hectares of vineyards are planted predominantly to Chardonnay, Shiraz, Cabernet Sauvignon, Verdelho and Viognier. The region is also becoming increasingly known for alternative (or emerging) wine varieties locally referred to as ‘Strange Bird’ varieties.  . . . #qldwine #queenslandwine #granitebelt #granitebeltwine #granitebeltwinecountry #winery #qldwinery #masterofwine #chardonnay #shiraz #agedwine #wine #winelover

Evening visit to Bollinger by Peter Scudamore-Smit Evening visit to Bollinger by Peter Scudamore-Smith MW; meeting Caroline for a cave and vieille vignes stroll; past the demonstration plot growing the seven legislated varieties that grow in Champagne vineyards; past stacks of magnums that age reserve base wines (totals 900,000) that will be used within 15 years; past old wine barrels that should have a status badge for rarity (there are 5000; supported by Champagne’s sole cooper); tasting Special Cuvee with its English spelling; 60/25/15 varietal split (meunier last); 60% reserve wines; portion barrel fermented; just a total mouthful of the mix of freshness, lemon zest, barrel and yeast complexity (ample cereal notes as proof), palate power that does not wish to taper, cream pie yeast notes that tell the age story; drink, drink; Rose is a stunner; the idea of fruitiness, which it is, sounds funny (so much aged stuff hanging around in the chalk); but it’s a mound of flavour led by a 62/24/14 assembly; of which the pinot noir is 5% still wine to give substance; 4 & half years lees aging; a wine to hollow the palate while you slice a rib steak; and the wine of a magic year; 2014, not really! But the wine is; 61/39; this mainly grand cru; barrel fermented; fresh as an Verzenay daisy; lovely linear acidity hitting all the citrus notes-lime, lemon, pink grapefruit, in a coil with its acidity; yet it still dances lightly; long living if needed, but drink now, it’s so good.
