Brand Management (vineyard to bottle)

Support your dream by taking up professional design of your vineyard, winery or both and have plans transformed into reality. Participate in the business planning for the grape or wine industry, take ownership of the feasibility studies, cash flow analyses, the project design and its implementation. Play the role of principal as an experienced contracted professional progresses your grape plantings to becoming harvesting decisions, wine style selection, blending, finishing, bottling and labelling on a project basis. Such a professional can assess risks, monitor yields, grape juice and wine recoveries, determine bottling and packaging specifications and deliver the high quality products to specification as devised in the business plan.

Vineyard Establishment and Management

Participate in the selection of sites suitable capable of quality wine grape growing. If you own land then analytically determine the best vineyard site.

Contract a professional with current industry knowledge on what to plant, and nurture varieties which are relevant five years on. Play a part in vineyard design, e.g. spacings, trellis. Have a professional project manage the installations of trellis, irrigation, soil amelioration, vine planting, summer and winter management, appoint suitable vineyard management. Seek grape supply arrangements or winery uptake.

Winery Design and Winemaking

Capture your architectural thoughts and create a functional winery containing equipment supplied to budget, capable of sensible and economical expansion, 100-2000 tonnes capacity, and even have Peter appoint a suitable winemaker.

Peter has a wide knowledge of winery layout, workplace efficiency, process design, selection of equipment capacity, supply of services, fermenter design, storage design and requirements, temperature management, process automation, software services, waste management, occupational health, safety and environment issues, bottling equipment, dry storage and final turn-key operations.

Wine Broking

As the company has previous international and national broking experience, here is an experienced trader who will sell surpluses, or find the suitable supply of grapes for designated styles. For international buyers requiring bulk shipments of wine to tight specifications, business is arranged. Vineyards and wineries are listed for sale or for purchase, using an experienced professional with valuation capabilities, for business re-fits and expansion project management.

Wine Education

Peter Scudamore-Smith and Andrew Corrigan MW (partners in eWine) are Queensland's leading wine educators. To attend a course or find the yearly timetable goto www.ewineconsult.com

Peter and Andrew deliver "Wine Appreciation-A General Course" for people who enjoy wine. In an ideal environment they introduce wine to people who have not previously undertaken a formal course. As we are all busy people the course is restricted to four consecutive evenings with food combinations being an integral theme. If you miss one evening we invite you to complete the course by attending a course on another occasion. Importantly a balanced list of wines of various retail values is supplied, and a course wine list is issued at completion with the wines correctly described.

For tasters with a deal of wine drinking experience eWine offer an international course "Tasting and Talking Wine Internationally" which broadens the course scope to an international flavour. Participants become worldlier in their taste knowledge, can visualise the differentiating features of new world and old world tastes, and then go into the ine community with a balanced view of the world of wine.

Importantly eWine offers course completion certificates, examinations and an assessment of competency if participants require certified recognition of their attendance or a marked recording of their knowledge level.

Courses have a high reputation by both instructors being Masters of Wine, Queensland's only two.

Wine Advice Legal

Peter Scudamore-Smith takes instructions as an expert witness in the above areas of expertise in various court jurisdictions within Australia.

Sensory Services

Finishing off is the most important part of winemaking (and it is often missed by small wineries) as it is the last opportunity to make style modifications before bottling. Participate in finessing the style, blend improvement, upply improvement and polishing prior to blending. Some wineries require classification assistance post vintage; receive gradings for the beverage, premium and super-premium levels and accept advice on style refinement. In some circumstances clients request planning for high achievement which entails strategic grape sourcing, winery collaboration, a revision of oak management and the review of business plans.

If you live in the country or are an employee in a regional winery cellar door then contact Peter (insert link) for a purpose designed one day or weekend course proposal conducted at your premises. Include your clients as they will then buy more of your wine! Peter has noticed that certain Queensland wineries employ unqualified cellar staff and eWine can assist by training staff to sell more premium wine. In staff development wine and food matching, competitor awareness and style understanding are the major presentation areas.
